Up up and away!

After a long period of blog silence I am happy to announce my return to Four Figs!  I have packed up my life in Canberra and moved to Geneva, Switzerland for the next three years.


Luckily I had two week's holiday in the USA (more about this in a future post) before the move, which helped to keep me relaxed and calm through the packing and uplift to my new life on the other side of the world.  But finally I am here, my kitchen paraphernalia and cookbooks unpacked and my wooden decoy duck in pride of place on the mantlepiece in my apartment.  It's time to explore a whole new world of food, flavours and cooking!



I've already made it to the nearby Ferney Saturday farmer's market (thanks to Ruth, Nick and Ava!) and  have cooked my first meal in this strange new kitchen.  It was a fairly simple dish but I was lucky to have a friend in town to share it with.  In fact, he was most insistent that it must make it to the blog as it had been too long since my last post.  It's nice to know my presence on Four Figs has been missed!

I've also been tasting some delicious local food - including cheese fondue at a restaurant, Cafe du Soleil, which is famous for this traditional Swiss dish and conveniently located down the street from my apartment.  



My visitor and I also managed to squeeze in a quick trip across the border to Annecy for moules on a particularly sunny and beautiful day.  In fact, the weather's been balmy - the last breath of summer before the long, grey winter ahead.


So here it is.  Lemon chicken with braised fennel and herbs, eaten on the balcony overlooking the Alps - the dish that christened my new kitchen and I hope you enjoy it too.

Lemon Chicken with Braised Fennel



- 4 chicken breasts (will feed two generously - but just add an extra breast for each additional guest and don't forget to increase the other ingredients too!)
- 1/2 cup olive oil
- juice of 2 lemons
- 2 lemons, quartered
- 2 tablespoons flat parsley, chopped
- 2 sprigs of rosemary (fresh), chopped finely
- 2 cloves garlic, crushed
- 1 bulb fennel
- 1 cup white wine
- salt and pepper to taste

Preheat the oven to 180 degrees Celcius (200 degrees if you don't have fan forced).

First marinate your chicken in the oil, lemon juice, garlic and herbs.  Add it all to a non-reactive bowl (glass or metal), stir to make sure the chicken is thoroughly coated, cover the bowl in cling film and pop into the fridge for at least 30 minutes.




Meanwhile, slice your fennel bulb as finely as you can, discarding and tough bits from the base of the fennel or dry bits on the outside of the bulb.  Reserve some of the green tufts at the top if you can to add to the dish later.



Place the sliced fennel on the base of a baking tray or dish and sprinkle with the white wine.  Season with salt and pepper.


Layer the chicken breasts on top of the fennel, with the lemon wedges, and sprinkle with the reserved fennel leaves.

Cook in the preheated oven for 20-30 minutes depending on the size and thickness of your chicken breasts.  You should check them to make sure they're cooked -  try and have one "trial" breast you can cut to check inside.


The wine in the fennel base helps keep the breasts moist while cooking the fennel and provides a delicious sauce at the end.

I served this with boiled new potatoes rolled in butter and parsley.

Chocolate Chip Peanut Butter Cookies


I am very very excited that in a few short days, I will be packing a suitcase, boarding a plane and heading to the US of A.  In honour of this anticipated holiday, I give you some seriously delicious cookies care of the Martha Stewart New Classics Cookbook.


Now, a few months ago I bought some peanut butter from Costco.   Being that it was Costco, the jar was pretty humungous and it was still largely untouched after several months in my pantry.  With the departure day for Geneva six weeks and counting, I have begun a (mostly vain) attempt to reduce the contents of the aforementioned pantry - a survey of which revealed the giant jar of smooth peanut butter (I'm really more of a crunchy fan) and a large bag of Lindt chocolate chunks (thanks to Ryan!).  It seemed I was destined to celebrate my upcoming US roadtrip with some classic chocolate chip cookies.

The great thing about this recipe is that the peanut butter replaces most of the normal butter in the plain chocolate chip cookie recipe.  I like to kid myself that this makes it ever-so-slightly healthier...  I know, I know; I'm deluding myself.  But of one thing about this recipe I am wholeheartedly sure - peanut butter + chocolate = deliciousness!  Bake these cookies and you won't regret it.


Chocolate Chip Peanut Butter Cookies


- 2 1/4 cups plain flour
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup white sugar
- 1 cup brown sugar
- 1/2 cup shredded coconut (unsweetened)
- 3/4 cup butter
- 1/2 cup smooth peanut butter
- 2 teaspoons vanilla extract
- 2 cups chocolate chunks (I used dark Lindt chocolate)

To start off, preheat your oven to 180 degrees Celcius.

In a small bowl, whisk together the flour and baking soda (it saves having to sieve it).



If you have a mixer, use the paddle attachment - it was the first time I had used mine!  Mix the butter and peanut butter with the two types of sugars until smooth - the cookbook uses the term "fluffy", which is perfect.

Reduce the speed of your mixer and add the salt, vanilla and the eggs.   Only mix until well combined.  (You can do this with a wooden spoon and some elbow grease, if you don't have a mixer.)

Fold in the chocolate chips and the coconut.


Cover the baking sheets with baking paper and drop tablespoon-sized balls of the cookie dough about two inches apart on the sheets.  Pop in the oven for around 8-10 minutes.  You need to take them out when the centres are still a bit soft, or else they'll burn on the bottom.  You should also let them cool on a wire rack.



These are seriously delicious cookies and I dare you to try and eat only one!

I am still alive...just moving!

Just a quick update to let you know what's been going on with Four Figs!  Yes, I have been AWOL.  Yes, I am alive.  Yes, I will shortly resume blogging.  But you'll have to bear with me if I am a little sporadic in my posts over coming months.  This is because I am disconnecting from my life in Canberra, Australia and heading overseas to live in Geneva, Switzerland for the next three years.  In between, I am catching up with friends and going on a roadtrip across the Deep South of the US of A.  I will endeavour to provide you with details of my further food adventures while this is all going on, but you will have to forgive me some patchiness in my blogging while I re-combobulate my world and resume cooking again!

This weekend I will be bringing you some tasty Chocolate and Peanut Butter Cookies to kick off my USA adventure and from there I plan to send out some live updates on my eating adventures on the roadtrip.  Promise!

Mushroom Lasagna

Of two things I am sure - firstly, my mushroom lasagna tastes even better now than when I first whipped it up for the unexpected arrival of a vegetarian at my dinner party in Jakarta.  And, secondly, it really is not the most photogenic of dishes and doesn't look nearly as good in the pictures as it tastes!



I should explain the genesis of this recipe a little more.  In Jakarta I frequently had folks over for dinner on school nights - the benefit of a maid and driver to run around and do the shopping for you.  While I still cooked everything, I didn't have to stop off at the supermarket on the way home etc etc and my house was always sparkling clean when I arrived.  As a result, I developed a lot of "in the oven in an hour" dishes and always made sure to have some staples like dried porcini mushrooms and (gasp) dry lasagna sheets in the cupboard - and pre-cooked bolognese sauce in the freezer - for the arrival of impromptu dinner guests.

But one night, just when I was safe in the knowledge that the four friends arriving at my dinner table in an hour would be enjoying lasagna bolognese prepared in a jiffy, the rug was pulled out from under me with the advice that one of the guests was a vegetarian (double gasp).

Now, I seem to have an inordinate number of vegetarian friends and a correspondingly large repertoire of vego-friendly dishes for just such an occasion.  But, on this night, I discovered the dining proclivity of aforementioned guest after my wonderful maid had departed for the night.  Disaster!  Rather than force the vegetarian to nibble on green salad all night, my recipe was born.

Over the last few years the dish has been refined and refined, so now it's rather more complicated than the original.  I have added a variety of chopped fresh mushrooms to my dried porcini and I encourage you to make or buy fresh pasta sheets rather than dried (although dried still works in a pinch).  I also use truffle oil and a little porcini powder, but these are not strictly necessary and I have given you options if you don't have access to these ingredients.  The real key to the dish is home-made bechamel sauce, which is actually very easy.  Butter, flour, (and a litre of) milk.  That's it.

So please forgive the un-photogenic final shots.  It may look like a blob of brown and cream goo, but god what a delicious blob!


Mushroom Lasagna


- 200 grams field mushrooms, sliced
- 350 grams button mushrooms, sliced
- 200 grams shitake mushrooms, sliced
- 1/2 cup dried porcini mushrooms
- 2 tablespoons olive oil
- 1 teaspoon truffle oil (optional)
- 2 cloves garlic, diced finely
- 1/2 cup pouring cream
- 1 teaspoon porcini powder (or beef stock powder)
- 1/2 teaspoon chopped thyme
- fresh pasta sheets (a box of dried pasta sheets is acceptable in a pinch)
- 1 1/2 cups grated cheese

Bechamel Sauce
- 1/2 cup butter
- 1/2 cup plain flour
- 3 1/2 cups milk
- 1/2 cup pouring cream
- salt and pepper to taste (truffle salt if you have it)

Kick off by slicing your mushrooms to roughly equal thickness and size.  Brush any grit from the mushrooms prior to slicing them.  Now, in a pyrex bowl, soak your porcini mushrooms in 1 1/2 cups boiling water for at least 15 minutes.  The water will turn a golden brown colour and any grit will settle to the bottom the bowl.  Don't throw this water out, we'll be using a little of it later.



Next heat the olive oil in a pan and add the garlic.  After about 30 seconds, add in the field mushrooms.  When they've reduced in size and softened, add in the shitake mushrooms, then the button mushrooms and, finally, the porcinis (use a slotted spoon to remove then from the liquid without stirring up the grit).



When the mushrooms are looking soft and brown and delicious, drizzle the truffle oil over the tope and then add the cream, stirring, while it bubbles and thickens.  Sprinkle the porcini (or stock) powder over the top and stir in until combined, then stir through the thyme.  Add one cup of porcini water and allow to reduce again on a brisk simmer until it's nice and thick.  Taste and add in salt and pepper according to your taste.  Turn off the heat and set aside until we are ready to compose the lasagna.



Now it's time to tackle the bechamel sauce.  Melt the butter in a saucepan on a medium heat.  Using a whisk, stir in the flour and whisk until it's a thick and yellow paste.  Pour in the milk and cream, whisking continuously until it comes to a boil.  It will thicken as you do this, so if you think it's taking too long to come to a boil and you start to worry, just check on the back of a wooden spoon to mark the progress of this process.


When the sauce comes to a boil, turn down the heat so it hits a gentle simmer.  Pop the lid on the saucepan and leave to simmer for 20 minutes, stirring every five minutes or so.   This helps to make sure it's not sticking to the bottom of the pan or becoming gluggy because the heat's too high.  Add salt and pepper when the sauce looks thick and delicious - this will add a lot of flavour, so don't put too little seasoning in.  Preheat your oven to 200 degrees Celcius while you are watching the bechamel.

Line your lasagna dish with a layer of fresh pasta.  Now add a layer of bechamel at least one centimetre thick.  Now a layer of mushrooms and top it off with a sprinkle of grated cheese.  Add another layer of pasta, then bechamel, then mushrooms.  Finally, add a last layer of pasta, followed by bechamel and cheese on top - no mushrooms on the top layer.




Bake for 30 minutes, or until golden brown on top and bubbling hot.  I recommend allowing it to sit outside the oven for around ten minutes while it settles and cools slightly.  This helps it "set" so it holds together a bit better for serving.


Serve with a light, crisp green salad, to counteract the cream and butter in the sauce...

Poached Pears


 About a month ago a friend whipped up her "go to" dessert on a weeknight - pears poached in red wine syrup.  Now, Jess seemed to think this was a lazy woman's dessert, nothing special, just a last minute thing, but I beg to differ.  I think poached pears are the height of elegance in a dessert.  Simple, elegant flavours and so beautiful to look at... and to eat!  Served with cream or plain yoghurt, they are a delight.  And yes, they are a simple dessert, but classic is classic for a reason.


And so, a few weeks later, my mother asked me to contribute a dessert to dinner and my first thought was poached pears.  When I arrived at her place to pop them on the stove, Mum gently nudged me in the direction of Alice Water's "The Art of Simple Food".  Alice provides a simple, neverfail poached pear recipe and then encourages you to go out and tweek it according to your taste, the type of pear you are able to buy at the time and what you might happen to have handy in the cupboard.  I have since cooked this fabulous recipe many, many times and every poached pear has been served to acclaim at the table.


In the true spirit of Alice, the recipe I am presenting to you evolved out of some crisp teeny-tiny coriole pears I purchased at the market and a half bottle of champagne left over in my fridge from a dinner party.  But your recipe could equally feature a larger, softer variety of pear and whatever wine you happen to have handy.  Red wine is lovely because of the tint it gives to the pears.   I love the way, when you scoop into them with your spoon, there's a sharp colour contrast between the crimson of the outside of the pear and the creamy tender flesh within.   Combined with the tartness of a dollop of plain (preferably unsweetened Greek) yoghurt and you're onto a winning combination.


Feel free to experiment.  I used vanilla bean paste in mine (you can tell from all those wonderful brown specks in the pictures) but you could equally add some lemon zest or, with the red wine syrup, a cinnamon stick and some cloves.  Mix it up and bask in the glow of your guests' enjoyment.  And be sure not to tell them just how easy it was!


Poached Pears

- 4 coriole pears (or any other variety you like)
- 2 cups leftover champagne (or any type of wine, red or white, you happen to have handy)
- 2 cups water
- 1 1/4 cups white sugar
- 1 teaspoon vanilla bean paste (or 1 teaspoon lemon zest)

On a low heat in a saucepan big enough to hold all your pears, dissolve the sugar in the champagne and water.  Add the vanilla bean paste when it warms up and you can no longer see the sugar granules in the liquid.  Bring to the boil.


Working quickly, while the syrup is getting up to a boil, peel your pears and then scoop the stem at the bottom of the pears out.  I used a melon scooper (circa 1980 - thanks Mum!) but a teaspoon should also do the trick, or even a small paring knife.  Leave the stems in, they are a handy tool for moving the pears, plus they look so pretty.



Now, before the pears have a chance to brown, plop them into the boiling syrup (being careful not to splash yourself!).  Reduce the liquid down to a slow simmer.


Cover the saucepan and cook for 15-40 minutes depending on the size and the variety of the pear.  Some pears are softer than others, some are larger or smaller.  It's best to keep an eye on them and use a knife to determine when they're soft and buttery.   You don't want to stew them - they need to be firm enough to stand up on the plate - so keep checking every five to ten minutes.


Once they are ready, you can turn off the heat and leave them in the liquid with the lid on until you're ready to serve.  They retain their heat pretty well.

To serve, lift the pear out of the syrup and place in a bowl so it is standing upright.  Add a dollop of plain yoghurt (or cream if you prefer) and drizzle with a little of the syrup.

See!  Easy and delicious.  And don't they look elegant.
